Chocolate Chip & Hazelnut Cookies đ Nothing further needed. Simples wee recipe perfect for a weekend treat. I put some in the freezer so when I fancy one I can just defrost it!đ If youâre not a fan of hazelnuts substitute for walnuts đđ» (Or leave the nuts out altogether, you do you!)
Grab:
70g chopped hazelnuts
170g dark chocolate
170g milk chocolate
240g butter
240g caster sugar
100g Demerara sugar
Tablespoon vanilla
1 egg
1 egg yolk
220g plain flour
1 teaspoon baking soda
How to?
1. Preheat oven to 160oC. Place the chopped hazelnuts onto a lined baking sheet and toast in the oven for about 20mins until golden brown. Place into the fridge to cool.
2. Place 120g of the butter into a small pan and heat under a medium heat until it browns. Remove from heat and leave to cool
3. Place 120g butter into a stand mixer and add both the sugar as. Beat until creamed. Add the browned butter in a slow steady stream.
4. Add the egg & egg yolk and the flour. Beat until just combined. Add both the chocolates and the roasted hazelnuts. Mix until just combined
5. Spoon out balls weighing around 40g each and fork into a sphere, place these onto a lined baking sheet and space well apart. Place into the freezer for 30mins
6. Bake at 160oC for 20-25minites until golden. The more you cook them, the crispier the cookies will be.
