Grab:
Teaspoon of:
Oregano, smoked paprika, garlic salt, chipotle pepper, black pepper, chipotle peppers
1 egg
400g lean meat
1 onion
200g semi dried tomatoes
Tablespoon of tomato purée
Can of tinned tomatoes
1 chicken stock cube
1 packet of spicy Mexican rice
150g strong cheese
How to?
1. Place the meat in a bowl, add egg & spices
2. Heat pan with tablespoon oil
3. Make meatballs from meat and once pan is hot brown them off (donât move them too much or theyâll break up)
4. Remove meatballs from pan. Fry off onion and semi dried tomatoes in a little more oil. Add tomato purée.
5. Add can of tomatoes & stock cube. Add 1/2 can of water. Simmer gently.
6. Add meatballs back into pan. Add rice and use spoon to spread equally over the pan. Top generously with cheese
7. Bake at 180oC for 20 minutes
